Air Fryer Scotch Eggs

Season the sausage meat with the thyme, salt and pepper, then divide it into 4 portions and flatten each one into a patty on a sheet of cling film.

Ingredients

  • 4 piece eggs, cooked and peeled
  • 400 g pork sausage meat
  • 1 piece egg, beaten
  • 100 g panko breadcrumbs
  • 3 tbsp plain flour
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • 1 tsp salt and black pepper

Steps

  1. Season the sausage meat with the thyme, salt and pepper, then divide it into 4 portions and flatten each one into a patty on a sheet of cling film.
  2. Wrap a patty around each peeled egg, sealing the meat completely and rolling the ball smooth between your palms.
  3. Roll each ball in flour, then in beaten egg, then in panko breadcrumbs, and brush lightly all over with olive oil.
  4. Place them in the air fryer basket with space between them and cook at 190°C for 14–16 minutes, turning halfway, until deep golden and cooked through.
  5. Rest for 5 minutes, then cut in half and serve warm.
