BBQ Jackfruit Bites

Drain the jackfruit, pat it very dry and pull each piece apart into shreds, discarding the tough cores.

Ingredients

  • 560 g canned young jackfruit, drained
  • 120 ml vegan bbq sauce
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt

Steps

  1. Drain the jackfruit, pat it very dry and pull each piece apart into shreds, discarding the tough cores.
  2. Toss the shreds with olive oil, smoked paprika, garlic powder, onion powder and salt.
  3. Spread them in the air fryer basket and cook at 190°C for 12 minutes, shaking twice, until the edges dry out and crisp.
  4. Mix the BBQ sauce with the maple syrup, pour it over the jackfruit and toss to coat every piece.
  5. Return everything to the basket and cook at 190°C for 6-8 minutes more, shaking halfway, until sticky and caramelised.
  6. Serve hot, piled into buns or over rice.
