  • 1 piece medium zucchini, grated
  • 100 g corn kernels (fresh or frozen)
  • 1 piece large egg
  • 40 g all-purpose flour
  • 40 g shredded cheddar cheese
  • 2 tbsp green onion, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Steps

  1. Grate the zucchini and place it in a colander. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Squeeze out as much liquid as possible using a clean kitchen towel.
  2. In a large bowl, combine the squeezed zucchini, corn kernels, egg, flour, shredded cheddar cheese, chopped green onion, remaining salt, and pepper. Mix until just combined.
  3. Form the mixture into 6-8 small patties (fritters). Lightly brush each fritter with olive oil.
  4. Preheat your air fryer to 180°C (350°F) for 5 minutes.
  5. Place the fritters in a single layer in the air fryer basket, ensuring not to overcrowd. Cook for 15-18 minutes, flipping halfway through, until golden brown and crispy.
