Cherry Turnovers

Toss the pitted cherries with the sugar, cornflour and lemon juice in a bowl and leave to stand for 5 minutes.

Ingredients

  • 1 piece ready-rolled puff pastry sheet
  • 300 g cherries, pitted
  • 3 tbsp caster sugar
  • 1 tbsp cornflour
  • 1 tsp lemon juice
  • 1 piece egg, beaten
  • 1 tbsp icing sugar

Steps

  1. Toss the pitted cherries with the sugar, cornflour and lemon juice in a bowl and leave to stand for 5 minutes.
  2. Cut the puff pastry into 4 squares, spoon the cherry filling onto one half of each square and brush the edges with beaten egg.
  3. Fold the pastry over into triangles, press the edges with a fork to seal and cut a small slit in the top of each one.
  4. Brush the tops with egg, place the turnovers in the air fryer basket lined with parchment paper and cook at 180°C for 12–14 minutes, until puffed and golden.
  5. Cool for 10 minutes, dust with icing sugar and serve.
